The great culinary cultures of the world have their own signatures sauces The Aztecs combined chilies, cacao, and vanilla among other ingredients. To create a mixture which they called, MOLLI the Nahuatl word for sauce.

Mole Negro/Black Mole
Oaxaca, mulato, and puya chilies, plantain, sunflower seeds, peanuts and almonds the blackening feature is done by toasting the chilies to an absolute crisp stage.
Mole Verde/Green Mole
A mixture of pumpkin seeds, ground nuts and sesame seeds, green tomatillo, jalapeno pepper and fresh green herbs
Mole Blanco/White Mole
Roasted almonds, white chocolate, cinnamon, among other ingredients with a touch of cream make this, the mole specially served at weddings
Mole Colorado/Red Mole
The red color comes mostly from the types of the chilies used, Ancho , pasilla , cascabel , plantain, dark chocolate raisins, and peanuts
Jamaica
Mulato chili, sesame and pumpkin seeds, peanuts, walnuts, red plums and hibiscus flowers
Mole Amarillo Yellow Mole
This mole has its exception, it is a beef stew. Created with the combination of chilies, squash, corn, and carrots. Not well known but no less delicious than the others
